Ca. 100 FIP-AIU/mg (FIP-α-amylase inhibitor unit) using porcine pancreatic α-amylase. This highly purified Acarbose, a pseudotetrasaccharide, inhibits α-amylases [EC 184.108.40.206], α-glucosidases [EC 220.127.116.11], saccharases [EC 18.104.22.168]. Used e.g. in enzymatic conversions and assays where α-amylases, α-glucosidases or saccharases interfere with the reaction.
